Some of my favorite desserts begin with just a few good ingredients and almost no preparation. These baked pears with Gorgonzola, walnuts, and fresh thyme are exactly that kind of recipe: warm, fragrant, gently sweet, and just savory enough to feel special.
When pears go into a hot oven, their natural sweetness becomes more pronounced. Gorgonzola softens into a creamy, salty filling, while walnuts add a little crunch and fresh thyme brings an earthy aroma. It is a lovely combination for a relaxed fall dinner, a winter gathering, or even alongside morning coffee.
You need only five minutes to prepare three pears, and the oven takes care of the remaining fifteen. Serve each warm half as a small dessert or as part of a cheese course. I like keeping the presentation simple so the pear itself remains the star.
At a glance: 6 servings · 5 minutes prep · 15 minutes baking · 20 minutes total · 400°F (200°C).
How to prepare the pears
First, halve the pears and scoop out the cores to make room for the filling.
Fill each pear half with walnuts and Gorgonzola crumbles, then scatter fresh thyme over the top before baking.

Gorgonzola Baked Pears
Warm baked pear halves stuffed with Gorgonzola cheese, crunchy walnuts and fresh thyme. This simple sweet-and-savory fall dessert takes just 5 minutes to prepare and 15 minutes to bake at 400°F (200°C). Makes six individual servings.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Halve the pears lengthwise. Scoop out the seeds and make a small cavity in each half.
Arrange the six pear halves cut side up. Divide the chopped walnuts (45 g / 1.6 oz) and crumbled Gorgonzola (50 g / 1.8 oz) among them. Sprinkle with fresh thyme.
Bake for 15 minutes, until the pears are tender but hold their shape and the cheese has softened. Serve warm.
Tips for the best baked pears
Choose pears that hold their shape. Ripe but still firm Bosc or Anjou pears are good choices. Very soft fruit may collapse before the filling is warmed through.
Cut an even cavity. Scoop out the seeds gently, leaving enough flesh to support the walnuts and cheese.
Chop the walnuts. Smaller pieces nestle into the pear halves and give each bite a better balance of flavor and texture.
Watch the pears, not only the clock. Fifteen minutes is our target at 400°F (200°C); especially firm or large pears may need a little longer. They should yield to the tip of a knife while keeping their shape.
Serving and storage
These pears taste best warm, shortly after baking, when the Gorgonzola is soft. They are equally lovely as a light dessert, an appetizer, or a sweet-and-savory accompaniment to a cheese board. For a dinner party, you can halve and core the pears ahead, then fill and bake them close to serving time.
Refrigerate leftovers in a covered container and enjoy within two days. Reheat gently in the oven until warm; the walnuts will be softer after storage.
Frequently asked questions
Can I make baked pears ahead of time?
You can prepare the pear halves and measure the filling ahead, but bake them just before serving for the best texture.
Do I need to peel the pears?
No. The peel helps the halves keep their shape and looks beautiful once baked.
What if my pears are very firm?
Check for tenderness at fifteen minutes and continue baking in small increments if needed.
